Vegan Carrot Bacon

INSTRUCTIONS

  • 1 Mix spices in small bowl. In separate small bowl, mix 1 teaspoon of the spice mixture and 2 teaspoons of the maple syrup; reserve for glazing carrots. Add soy sauce, olive oil, tahini, liquid smoke and remaining maple syrup to bowl with remaining spice mixture. Whisk until well blended; set aside.
  • 2 Shave carrots into thin ribbons using a vegetable peeler. (These should resemble thin bacon slices!) Place carrot ribbons in large resealable plastic bag. Add soy sauce mixture, turning to coat. Marinate 15 minutes. Remove carrots from marinade and place on paper towels to drain.
  • 3 Working in batches if needed, place carrot ribbons in air fryer basket in single layer. Air Fry at 300°F about 7 minutes or until crisp. Repeat with remaining carrot ribbons. Drizzle or brush carrot bacon with maple glaze to serve.
  • 4 Test Kitchen Tips:
    •Air Fryer cooking temperatures vary; adjust temperature and time as needed.
    •When cooking in batches to prepare carrot bacon in the air fryer, it may be necessary to reduce cooking time after the first batch. We recommend checking for doneness 1 to 2 minutes earlier for any subsequent batches.
    •Want to prepare carrot bacon in the oven? Arrange marinated carrot ribbons in single layer on parchment-lined shallow baking pans. Bake in preheated 350°F oven 15 minutes or until evenly browned, turning halfway through cooking.
