Ingredients
- 1 package slow cookers limited edition southwestern chicken and vegetables seasoning
- 1 1/2 pounds boneless skinless chicken breasts

frozen bell pepper strips
Substitutions available
- 2 cups fresh bell pepper strips
- 1 1/2 cups frozen corn
- 2 tablespoons cider vinegar
- 2 tablespoons oil
- 2 tablespoons water
INSTRUCTIONS
- 1 Place chicken and vegetables in slow cooker.
- 2 Mix Seasoning Mix, vinegar, oil and water in bowl until blended. Pour over chicken and vegetables; stir to coat. Cover.
- 3 Cook 6 hours on LOW or 3 hours on HIGH or until chicken is cooked through. Remove chicken from slow cooker.
- 4 Shred chicken, using 2 forks. Return chicken to slow cooker; mix well with vegetables. Serve over cooked rice or in warm tortillas with desired toppings, such as shredded cheese, chopped tomatoes, chopped avocados, sour cream, chopped cilantro, or green onions.
TIPS AND TRICKS
Slow Cooker Tip: For best results, do not remove cover during cooking.
