- Topping
- 1 cup brown sugar
- 1 cup pecans, chopped
- 1/4 cup butter, melted
- 1/4 cup flour
- Casserole
- 2 large sweet potatoes, mashed
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 teaspoons McCormick® All Natural Pure Vanilla Extract
- 1 1/2 teaspoons McCormick® Ground Cinnamon
- 1 teaspoon McCormick® Ground Nutmeg
- 1 pinch salt
- 1/2 cup butter, melted
- 2 eggs, beaten
- 1/2 cup heavy cream
INSTRUCTIONS
- 1 Preheat oven to 350°F. For Topping: Combine brown sugar, pecans, butter, and flour to a large bowl. Place in the refrigerator to set.
- 2 For Casserole: Combine sweet potatoes, sugar, brown sugar, vanilla, nutmeg, cinnamon, salt, butter, and eggs. Mix, continuously for 3 minutes. This makes the mixture fluffy. (Using an electric mixer is recommended)
- 3 Pour mixture into a medium sized (2-quart) baking dish, or 4 small baking ramekins, and bake for 20 minutes.
- 4 Remove the dish from the oven and crumble the topping over the top of the sweet potato mixture evenly and bake for another 10-15 minutes, or until browned.
- 5 Let cool and set for about 20 minutes.
- 6 Tip: To prepare sweet potatoes, wrap in foil and bake for about one hour at 375°F. Then peel and mash.
