In a medium saucepan, cook onion in hot oil over medium heat for 2 to 3 minutes or until softened. Stir in apples, sage (or thyme) and dried cranberries. Cook, covered, over medium heat for 10 to 12 minutes or until apples are softened, stirring occasionally. Remove from heat; stir in apple brandy, if desired. Let cool slightly. Serve warm over flatbread (or crackers or pita). Top with shredded cheese.
