Preheat oven to 350°F. In a large bowl, whisk together eggs, milk, granulated sugar, vanilla, orange zest and 1/2 teaspoon cinnamon. Place bread cubes in an ungreased 2-quart square baking dish. Pour egg mixture evenly over bread cubes. Sprinkle with chopped peanut brittle.
Bake, uncovered, for 40 to 45 minutes or until a knife inserted in the center comes out clean. Cool for 30 minutes.
In a large skillet, melt butter over medium heat. Stir in brown sugar until dissolved. Add banana slices. Cook and gently stir over medium heat for about 1 minute or until heated through. Remove from heat. Stir in the remaining 1/8 teaspoon cinnamon, rum (or orange juice) and banana liqueur (or crème de cacao or orange juice). Serve the sauce immediately with the warm bread pudding. If desired, garnish with orange zest.
