Heat oven to 350°F. Coat a 13-by-9-inch baking dish with cooking spray.
Heat 2 tablespoons butter in a large skillet. Add onion and celery; cook until softened, about 5 minutes.
Mix toasted bread cubes, sage, parsley, salt and pepper in large bowl. Melt the remaining 6 tablespoons butter and add to the bread mixture, along with the onion mixture. Add broth, a little at a time, tossing. (Add only enough to moisten; too much will make stuffing mushy.)
Bake, covered, for 30 minutes. Uncover. Bake for 15 minutes longer or until browned.
