Preheat broiler. In a broiler-proof medium skillet, heat oil over medium heat. Add broccoli, mushrooms, carrot and onion; cook for 7 to 8 minutes or until crisp-tender, stirring occasionally.
Meanwhile, in a medium bowl, whisk together egg whites, eggs, basil, salt and pepper. Pour the egg mixture over vegetables in the skillet and cook over medium heat. As mixture sets, run a spatula around the edges of the skillet, lifting the egg mixture so the uncooked portion flows underneath. Continue cooking and lifting the edges until the egg mixture is almost set and the surface is just slightly moist. Sprinkle with cheese.
Broil 4 inches from the heat for about 2 minutes or until the top is lightly browned and the center is set. Let stand for 5 minutes before serving.
