Preheat oven to 400°F. Place russet and sweet potatoes on a 15x10x1-inch baking sheet. Lightly coat with cooking spray and toss to coat. Bake for 20 minutes or until tender and lightly browned, turning once with spatula.
Meanwhile, in a large nonstick skillet, cook sausage, sweet pepper and onion for 8 to 10 minutes or until tender. Stir in sweet potato mixture, sage and pepper.
