Preheat oven to 375°F. Lightly brush a baking sheet with the olive oil. Place egg white in a shallow dish. In another shallow dish combine 1/3 cup of the panko, 1 tablespoon of the Parmesan cheese, 1/8 teaspoon of the black pepper, and the parsley flakes. Dip each eggplant slice in the egg white, then dip in the panko mixture to coat. Place eggplant slices on prepared baking sheet and lightly coat with cooking spray. Bake about 30 minutes or until crisp and golden, turning once.
Meanwhile, combine ground beef with remaining panko, 1 tablespoon Parmesan cheese, 1/8 teaspoon black pepper, the garlic powder, and egg. Evenly divide mixture into four 1/2-inch thick patties.
For a charcoal or gas grill, place patties on the grill rack directly over medium heat. Cover and grill for 8 to 10 minutes or until patties are done (160°F), turning once
To serve, top each eggplant slice with a beef patty and some of the marinara sauce. Sprinkle with cheese and top each serving with 1/2 cup arugula.
