In a medium bowl, stir together carrot, green onions, breadcrumbs, milk, Italian seasoning, garlic salt and pepper. Add the ground beef (or turkey or chicken); mix well. Shape meat mixture into four 1/2-inch-thick patties.
Grill burgers on the rack of an uncovered grill directly over medium coals for 14 to 18 minutes or until an instant-read thermometer inserted into the center of burgers registers 160°F; turning once halfway through grilling. (Or, place burgers on unheated rack of a broiler pan. Broil 3 to 4 inches from heat for 12 to 14 minutes or until done, turning once.)
Meanwhile, in a small bowl stir together mustard and curry powder.
To serve, place burgers on buns. Top with curry mustard, and if desired, zucchini and tomato.
