Lightly coat a large saucepan with cooking spray; heat over medium heat. Add ground beef (or chicken or turkey) and onion; cook until browned. If necessary, drain off fat. Stir in cumin and oregano; cook for 1 minute more. Add chipotles, undrained tomatoes, red beans, hominy, bell pepper and water. Bring to boiling; reduce heat. Cover and simmer for 5 minutes.If desired, sprinkle cheese over chili before serving.
