In a large skillet, cook chicken in hot oil until browned on all sides. In a 4- to 5-quart slow cooker, combine chicken, broth, barley, leeks, carrots, basil (or Italian seasoning) and pepper.
Cover and cook on Low for 4 to 5 hours or on High for 2 to 2 1/2 hours or until barley is tender. If desired, sprinkle with fresh basil (or parsley) before serving.
