Preheat oven to 325°F. Coat a 9-inch pie plate with cooking spray; set aside.
In a large bowl, combine egg, egg whites, brown sugar and 1 teaspoon vanilla. Beat with an electric mixer on medium speed for about 1 minute or until smooth. In a small bowl, stir together flour, baking soda and salt. Add flour mixture to egg mixture; stir just until combined. Fold in apples and nuts. Spread batter evenly in the prepared pie plate.
Bake for 25 to 30 minutes or until center is set. Cool slightly on a wire rack. Meanwhile, in a small bowl, whisk together sour cream, yogurt and the remaining 1/2 teaspoon vanilla.
To serve, cut into wedges. Serve warm. Spoon about 1 rounded tablespoon of the topping over each serving.
