In a large saucepan, heat oil over medium heat. Add pasta; cook and stir until golden. Remove from saucepan.
In a food processor or blender, combine tomatoes, yellow onion, jalapeño and garlic. Cover and process or blend until smooth. Strain mixture through a fine-mesh sieve; discard solids.
Add strained tomato mixture to the same saucepan. Cook for 3 to 5 minutes or until slightly reduced, stirring frequently. Stir in broth and pasta. Bring to a boil; reduce heat. Simmer for 6 to 10 minutes, or until pasta is tender. Season to taste with black pepper. Top each serving with cheese, red onion and cilantro.
