Place cranberries in a small bowl and pour in enough boiling water to cover. Let stand for 10 minutes; drain well.
In a large bowl, combine cranberries, walnuts, breadcrumbs, rosemary, salt and pepper. Add ground chicken (or turkey); mix well. Shape mixture into six 3/4-inch-thick burgers.
Preheat a charcoal grill. Grill burgers on the greased rack of the uncovered grill, directly over medium coals, for 14 to 18 minutes or until no longer pink (165°F), turning once halfway through grilling and topping burgers with cheese during the last 2 to 3 minutes of grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place patties on greased grill rack over heat. Cover and grill as above.)
Spread bottoms of rolls with mayonnaise and/or top with spinach (or arugula), if desired. Add burgers; replace tops of rolls.
