Cut chicken breast halves in half horizontally. Top each chicken piece with one-fourth of the the cheese. Wrap pancetta around cheese; tuck ends under chicken.
In a large nonstick skillet, heat oil over medium-high heat. Cook chicken, cheese-side up, over medium heat for 4 to 5 minutes. Turn carefully; cook for 4 to 5 minutes more or until golden brown and chicken is no longer pink. Transfer to platter; cover to keep warm.
Remove skillet from heat. A dd dates, vinegar and water to skillet. Return to medium-high heat. Cook, uncovered, for 5 to 7 minutes or until sauce is thickened and dates are soft, stirring to scrape up browned bits.
Spoon sauce over chicken. If desired, sprinkle lightly with salt and pepper.
