Set aside several whole basil leaves for garnish. Using a sharp knife, chop the remaining basil leaves. In a medium bowl, combine chopped basil, oil, pepper and vinegar. Add cheese cubes to herb-oil mixture, tossing gently until cheese is well-coated. Cover and chill for at least 1 hour or up to 5 days.
Transfer cheese mixture to a serving dish; garnish with the reserved whole basil leaves and, if desired, tomato slices. Serve with baguette slices or crackers.
