In a resealable plastic bag or an airtight container, combine coleslaw mix, pork, bok choy, bell pepper, sweet onion, celery, green onions, soy sauce, tomato paste, miso paste, sake, vinegar, thyme, salt and black pepper. Add broth. Seal and chill at least 2 and up to 24 hours.
Lightly coat a 3 1/2- or 4-quart slow cooker with cooking spray. Transfer coleslaw mixture to the prepared cooker. Cover and cook on Low for 6 hours or on High for 3 hours.
