Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Brush fish with 1 tablespoon oil; sprinkle with salt and pepper.
Preheat broiler. Place fish on the greased unheated rack of a broiler pan. Broil fish 4 inches from heat for 8 to 12 minutes or until fish flakes easily when tested with a fork, turning once halfway through broiling.
Meanwhile, in a small bowl, stir together the remaining 1 tablespoon oil, tomato, olives and parsley (or oregano or thyme). Spoon tomato mixture over fish. If desired, serve with salad greens.
