Rinse and drain wheat berries, farro or barley (if using), and wild rice. In a 3 1/2- or 4-quart slow cooker stir together wheat berries, farro, wild rice, broth, sweet potato, cranberries, celery, butter, garlic, salt and pepper.
Cover and cook on Low for 6 to 7 hours or High for 3 1/2 to 4 hours. Stir in the apples, walnuts, green onions and thyme.
