In a large bowl, combine cornmeal, 2 tablespoons milk, onion, garlic, salt, oregano and lemon-pepper seasoning. Add lamb and beef; mix well. Shape meat mixture into eight 1/4-inch-thick patties.
In a small bowl, combine feta and the remaining 1 tablespoon milk. Spoon cheese mixture evenly onto the centers of four patties. Top with the remaining patties; press edges to seal. Sprinkle cumin and cayenne evenly on patties.
Grill patties on the rack of an uncovered charcoal grill directly over medium coals for 12 to 16 minutes or until done (160°F), turning once halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place patties on grill rack over heat. Cover; grill as directed.)
Serve burgers in pita halves with arugula (or watercress).
