Place spinach in a large serving bowl; set aside.
In an extra-large skillet cook apple slices in 2 tablespoons of the oil over medium heat for 3 to 4 minutes or until tender. Stir in vinegar and honey. Bring just to boiling. Pour mixture over spinach; toss just until combined and slightly wilted. Divide among dinner plates.
In the same skillet heat the remaining 1 tablespoon oil over medium heat. Break four of the eggs into skillet. Sprinkle with half of the cheese, half of the salt, and half of the pepper. Reduce heat to low; cook for 4 to 5 minutes or until whites are set. For more doneness, cover for the last 2 minutes of cooking. Remove from skillet. Repeat with the remaining eggs, cheese, salt, and pepper. Arrange two eggs on top of spinach mixture on each plate.
