In a food processor, combine tomatoes, roasted pepper, bread pieces, almonds, vinegar, garlic, parsley, paprika, ground ancho and cayenne. Cover and process until combined. With the motor running, add oil through the opening in the lid in a thin steady stream until combined and mixture is finely chopped and desired consistency. Season to taste with salt.
Serve immediately, or cover and refrigerate for up to 1 week. Before serving, let stand for 30 minutes at room temperature. Serve with fish, poultry, beef, pork or vegetables.
