Preheat oven to 375°F. Lightly grease a 2-quart square baking dish; set aside. Heat apple juice, brown sugar and butter in a small saucepan over medium-low heat until butter melts, stirring to dissolve sugar.
Meanwhile, combine granulated sugar and cinnamon in a medium bowl. Add apple wedges; toss to coat evenly. Unroll dough and separate at perforations. Place a coated apple wedge along the wide edge of each dough piece. Roll up dough around apple wedges. Arrange in prepared baking dish. Slowly drizzle apple juice mixture over dumplings to coat evenly. Sprinkle tops with coarse sugar (or granulated sugar).
Bake, uncovered, for 25 to 30 minutes or until golden and apples are tender. Cool for 30 minutes before serving. If desired, serve with vanilla or cinnamon ice cream.
