In a medium saucepan, cook broccoli, covered, in a small amount of lightly salted boiling water for 3 minutes; drain. Rinse with cold running water until cool; drain again.
In a greased 2-quart au gratin or baking dish spread half of the bread cubes. Top with broccoli and cheese. Add remaining bread cubes.
In a medium bowl, combine eggs, soymilk (or milk), mustard, salt, pepper and nutmeg. Pour egg mixture over mixture in baking dish. Sprinkle top with green onions. Cover and refrigerate overnight.
Preheat oven to 325°F. Bake, uncovered, about 1 hour or until an instant read thermometer inserted in the center registers 160°F. Let stand for 10 minutes before serving.
