Cheesy Taco Chicken

Sheet pan chicken tonight? You bet. Coated in a blend of crispy panko and McCormick® Original Taco Seasoning Mix, and topped with salsa and melty cheese, this easy taco-inspired sheet pan chicken is a delicious departure from the weeknight dinner lineup.

Ingredients

  • 1 package McCormick® Original Taco Seasoning Mix
  • 1/2 cup panko breadcrumbs
  • 4 thinly sliced boneless chicken breast cutlets (about 1 pound)
  • 1 tablespoon oil
  • 1/2 cup prepared salsa
  • 1 cup shredded Mexican cheese blend or Cheddar cheese

INSTRUCTIONS

  • 1 Preheat oven to 425°F. Mix Seasoning Mix and breadcrumbs in shallow dish. Brush chicken with oil. Coat evenly on both sides with bread crumb mixture. Discard any remaining coating mixture. Arrange chicken in single layer on large shallow foil-lined pan sprayed with no stick cooking spray.
  • 2 Bake 10 minutes or until chicken is cooked through. Remove from oven. Spoon salsa evenly over chicken. Sprinkle with cheese. Bake 5 minutes longer or until cheese is melted. Serve with additional toppings, if desired, such as sour cream, sliced avocados and chopped cilantro.

    Test Kitchen Tips:
    • Start with 2 regular boneless skinless chicken breasts instead of chicken cutlets. Split chicken breasts in half horizontally, like you’re butterflying them, but cut all the way through to separate into two pieces of even thickness. Place chicken breasts in resealable plastic bag and pound gently with a meat mallet or heavy skillet until desired thickness (cutlets are usually about 1/4- to 1/2-inch thick).
    • For a flavorful twist, use any salsa or cheese blend you prefer! Try it with salsa verde or even your favorite queso.
