In a 4-quart slow cooker, place onion, potatoes and carrots. Top with sausages. Add beer, broth, paprika, caraway seeds and pepper. Top with sauerkraut.
Cover and cook on Low for 7 to 9 hours or on High for 3 1/2 to 4 1/2 hours.
Using a slotted spoon, transfer sausages and vegetable mixture to a serving dish. Serve over spaetzle or noodles drizzled with cooking liquid. If desired, serve with mustard.
