Ingredients 6 Servings
- Mediterranean Salsa
- 1 can (14 1/2 ounces) petite diced tomatoes, drained
- 3 tablespoons capers
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon all purpose seasoning basil oregano garlic
- Tuscan Chicken
- 1 tablespoon all purpose seasoning basil oregano garlic
- 1 1/2 pounds boneless skinless chicken breast halves
INSTRUCTIONS
- 1 For the Salsa, mix all ingredients in medium bowl. Cover. Refrigerate until ready to serve.
- 2 For the chicken, rub Seasoning on chicken to coat evenly.
- 3 Coat large nonstick skillet with no stick cooking spray. Heat pan over medium heat. Cook chicken 5 to 7 minutes per side or until cooked through. Serve chicken with Salsa.
TIPS AND TRICKS
If chicken breasts are large, remove tenders. Or, butterfly thick pieces by slicing in half horizontally, then cut into two pieces.
