Place Flavor Cube in medium bowl; crush with spoon or spatula until crumbled. Stir in oil, honey and lime juice until well mixed. Place shrimp and vegetables in 2 separate large resealable plastic bags. Pour half of the marinade into each bag; turn to coat well. Refrigerate 15 minutes.
Remove shrimp and vegetables from marinade. Discard any remaining shrimp marinade. Reserve remaining vegetable marinade. Alternately thread shrimp and vegetables onto skewers.
Grill skewers over medium heat 6 to 8 minutes or just until shrimp turn pink, turning frequently and basting with reserved vegetable marinade. Serve with rice and lime wedges and sprinkle with chopped cilantro, if desired.
