Ingredients
- 1 tablespoon vegetable oil
- 4 boneless skinless chicken breasts
- 2 tablespoons McCormick® Garlic, Herb and Black Pepper and Sea Salt All Purpose Seasoning, divided
- 8 ounces fresh mozzarella cheese, cut into 12 slices
- 2 plum tomatoes, cut into 6 slices each
- 1/3 cup balsamic vinegar
- 2 tablespoons packed brown sugar
INSTRUCTIONS
- 1 Preheat oven to 350°F. On the thickest side of each chicken breast, cut a wide pocket 3/4 of the way through, taking care to not cut through back or sides of chicken. Sprinkle inside of chicken breast pockets evenly with 1 tablespoon of the Seasoning. Stuff each pocket with 2 slices of mozzarella cheese and 2 slices of tomato. Press chicken lightly to seal; secure with toothpicks. Sprinkle stuffed chicken evenly on both sides with the remaining 1 tablespoon Seasoning.
- 2 Heat oil in large ovenproof skillet on medium heat. Add chicken; cook 2 to 3 minutes on each side or until browned. Mix vinegar and brown sugar in small bowl. Stir into skillet. Place skillet in oven.

Cook 25 to 30 minutes or until chicken is cooked through (internal temperature of 165°F). Remove from oven. Brush chicken with balsamic sauce and top with remaining slices of mozzarella and tomato before serving.
