  • 4 medium sweet potatoes, (about 2 1/2 pounds) cut into 1/2-inch slices
  • 1/4 cup (1/2 stick) butter, softened
  • 1 tablespoon all purpose seasoning crushed red pepper with garlic and oregano
  • 3/4 cup shredded Parmesan cheese

INSTRUCTIONS

  • 1 Preheat oven to 400°F. Arrange potatoes in single layer on foil-lined shallow baking pan.
  • 2 Bake 20 to 25 minutes or until fork tender. Meanwhile, mix butter and Seasoning. Set aside.
  • 3 Top each potato slice with 1/4 teaspoon of the butter mixture. Sprinkle Parmesan cheese evenly over potatoes. Return to oven. Bake 5 minutes longer or until cheese is melted.
