- 1 pound pork tenderloin
- 2 tablespoons olive oil
- 1 package McCormick® Farmers Market Chicken and Vegetables
- 1 pound red potatoes, cut into 1-inch cubes
- 2 cups baby carrots
INSTRUCTIONS
- 1 Preheat oven to 425°F. Place pork in center of foil-lined 15x10x1-inch baking pan sprayed with no stick cooking spray. Mix oil and Seasoning Mix in medium bowl; brush 1/2 of mixture on pork. Add potatoes and carrots to remaining mixture in bowl; toss to coat. Place vegetables around pork.
- 2 Roast 25 minutes or until pork is cooked to desired doneness. Transfer only the pork to a serving platter; cover with foil to keep warm.
- 3 Roast vegetables 10 minutes longer or until tender. Slice pork and serve with vegetables.
