Citrus Baked Salmon with Orange Salsa

  • Citrus Baked Salmon
  • 1 teaspoon McCormick® Paprika
  • 1 teaspoon McCormick® Whole Thyme Leaves
  • 1 teaspoon McCormick® Minced Garlic
  • 1/2 teaspoon McCormick® Ground Ginger
  • 1/2 teaspoon McCormick Gourmet™ Sicilian Sea Salt
  • 1/4 cup orange juice
  • 2 tablespoons olive oil
  • 1 pound salmon fillets
  • 1 tablespoon brown sugar
  • 1/2 teaspoon grated orange peel, (optional)
  • Orange Salsa
  • 2 cans (11 ounces each) mandarin oranges, drained and cut into 1/2-inch pieces
  • 2 tablespoons chopped red bell pepper
  • 1 tablespoon chopped fresh cilantro

INSTRUCTIONS

  • 1 Preheat oven to 400°F. For the Citrus Baked Salmon, mix all of the spices in small bowl. Set aside. Mix orange juice, oil and 1 1/2 teaspoons of the spice mixture in large resealable plastic bag or glass dish. Add salmon; turn to coat. Refrigerate 30 minutes. For the Orange Salsa, mix all salsa ingredients and 1 teaspoon of the remaining spice mixture in medium bowl. Cover. Refrigerate until ready to serve.
  • 2 Stir brown sugar and orange peel into remaining spice mixture in small bowl. Remove salmon from marinade and place on foil-lined baking pan. Discard any remaining marinade. Rub salmon with seasoning mixture.
  • 3 Bake 10 to 15 minutes or until fish flakes easily with a fork. Serve salmon with Orange Salsa.
