medium shrimp, peeled and deveined chopped
plum tomatoes, seeded and chopped

1Heat 1 tablespoon of the oil in large skillet on medium heat. Add onion, serrano pepper, salt, and pepper. Cook and stir 4 to 5 minutes or until onions are softened. Add shrimp and tomato; cook and stir 3 minutes or until shrimp just turn pink. Transfer shrimp mixture to large bowl; allow to cool completely. Stir in Mayonnaise and cilantro.
2To assemble quesadillas, place 1/4 cup of the shrimp mixture on one half of each tortilla. Sprinkle with 2 tablespoons of the cheese. Fold tortillas in half to enclose shrimp and cheese.
3Heat 1 tablespoon of the remaining oil in large skillet on medium heat. Carefully place 4 folded quesadillas in skillet. Cook 2 to 3 minutes per side, or until tortillas are browned. Remove from pan. Repeat with remaining oil and quesadillas. Serve with salsa verde, guacamole and lime wedges, if desired.
