Ingredients

  • 1 package McCormick® Original Taco Seasoning Mix
  • 2 portobello mushrooms, cut into 1/2-inch slices
  • 2 medium bell peppers, cut into 1/2-inch slices
  • 1 large yellow onion, cut into 1/2-inch slices
  • 1 cup frozen corn
  • 2 tablespoons oil
  • 8 (8-inch) flour tortillas, warmed

INSTRUCTIONS

  • 1 Preheat oven to 400°F.
  • 2 Place mushrooms, bell peppers, onion and corn in large bowl. Add oil and Seasoning Mix; toss until well mixed. Spread veggie mixture in even layer on a large foil- or parchment-lined shallow baking pan sprayed with no stick cooking spray. Roast 25 minutes or until vegetables are tender.
  • 3 Spoon veggie mixture into warm tortillas. Serve desired toppings.
