Cook 7 hours on LOW. Stir in mushrooms and barley. Cover. Cook 1 hour longer on HIGH or until barley is tender. Stir before serving.

My husband made this yesterday for today because it was supposed to be cold today so we wanted to have a warm, hearty soup ready. This soup is wonderful! It tastes as good as it looked.

Great recipe. I love soup this time of year and this was delicious. I am taking leftovers to work. I'm sure it will be even better reheated.
