Ingredients

  • 1 cup chicken stock
  • 1 package casserole rotisserie chicken pot pie seasoning mix
  • 1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
  • 2 cups potatoes, peeled and cut into 1/2-inch cubes (about 2 medium potatoes)
  • 1 cup finely chopped onion
  • 1 cup chopped celery
  • 1/2 cup heavy cream
  • 1 cup frozen peas and carrots
  • 1/2 teaspoon salt
  • 1/2 cup baking mix, such as Bisquick®
  • 3 tablespoons milk

INSTRUCTIONS

  • 1 Using a whisk, mix stock and Seasoning Mix in 6-quart slow cooker until well blended. Stir in chicken, potatoes, onion and celery. Cover.
  • 2 Cook 7 hours on LOW or 3 hours on HIGH.
  • 3 Stir in heavy cream, frozen vegetables and salt. Mix baking mix and milk in small bowl until it forms a soft dough. Drop by tablespoonfuls onto chicken mixture, to form 5 dumplings. Cover and cook 1 hour longer on HIGH or until dumplings are cooked through.

    Test Kitchen Tip: For a thicker sauce, whisk in 2 tbsp. cornstarch with the heavy cream. Prepare as directed.
