  • 1 package oven roasted limited edition vegetable bruschetta seasoning
  • 3 tablespoons olive oil
  • 1 cup eggplant, cut into 1-inch chunks
  • 1 cup zucchini, cut into 1-inch chunks
  • 1 cup yellow squash, cut into 1-inch chunks
  • 1 cup plum tomatoes, cut into 1-inch chunks
  • 2 cups bell peppers, cut into 1-inch chunks

Instructions

  • Preheat oven to 425°F. Mix Seasoning Mix and oil in large bowl. Add vegetables; toss to coat well.

  • Spread vegetables in single layer on foil-lined 15x10x1-inch baking pan sprayed with no stick cooking spray.

  • Roast 30 to 40 minutes or until vegetables are tender, stirring halfway through cooking.

  • Test Kitchen Tip: Serve on toasted sliced French bread, if desired.
