  • 6 slices thick-cut bacon, chopped
  • 1 medium yellow onion, chopped
  • 1 poblano chile pepper, chopped Substitutions available
    • 1 jalapeno pepper, chopped
  • 3 cloves garlic, finely chopped
  • 2 cans (15 ounces each) pinto beans, rinsed and drained
  • 1/4 cup packed brown sugar
  • 1/4 cup molasses
  • 1 cup Kitchen Basics® All Natural Original Beef Stock
  • 1 can (6 ounces) tomato paste
  • 2 tablespoons cider vinegar

Instructions

  • Preheat oven to 325°F. Cook bacon until crispy in Dutch oven or large oven proof saucepan over medium-high heat. Add onion, pepper, and garlic. Cook and stir 5 minutes or until tender.

  • Add remaining ingredients and stir. Cover and transfer to oven. Cook 1 hour.

  • Test Kitchen Tip: To make this dish milder, substitute a green bell pepper for the poblano chile pepper.
