When it comes to cheese and egg pairings, we usually think of omelettes or scrambles. Those things are good, but they are nowhere near as good as a gloriously yolky sunny side up egg sitting happily atop a bed of lacy, crispy, salty cheese. The impulse to fry an egg in a pile of cheese hit me like a ton of cheddar bricks while I was working on yesterday’s scrambles, and I had a lot of questions. Was I the first one to think of this? (No.) Am I a genius? (Also no.) Why isn’t this on brunch menus everywhere? (Human folly.) Honestly, look at the bottom of this thing and tell me you don’t desire it.

Not only are these eggs delicious, they are astoundingly easy to make. To make one for yourself, you will need:
Heat a nonstick skillet over medium heat and place a pile of cheese in the middle. Cook until it starts to look bubbly and lacy, like this:

Crack an egg right on top of the pile of cheese, and use a rubber spatula to keep the white from running off the top. Cover the pan, and cook for a few minutes until the white is set but the yolk is still runny. Gently slide the cheese egg off the plate with your spatula. Eat it, rejoice, and spread the good word.
