Ingredients
- Cottage Cheese Flatbread
- 1 full-fat cottage cheese
- 2 eggs
- 1/4 teaspoon
- 1/4 teaspoon
- 1/4 teaspoon
- Wrap
- 4 ounces fresh mozzarella
- 1/2 cup sliced roasted red pepper
- 2 cups arugula
- 1 tablespoon balsamic glaze
INSTRUCTIONS
- 1 Preheat oven to 350°F degrees. Line baking sheet with parchment paper and spray with no-stick cooking spray.
- 2 For the Cottage Cheese Flatbread, combine cottage cheese, eggs, garlic powder, parsley, and black pepper in a blender or food processor; cover and blend until smooth. Spread cottage cheese mixture onto prepared baking sheet.
- 3 Bake for 35 to 40 minutes or until the flatbread is brown on the edges and beginning to brown in the middle. Let cool on baking sheet for 5 to 10 minutes to allow it to set. Slice flatbread in half into two pieces.
- 4 To assemble Wrap, layer flatbread pieces evenly with mozzarella, roasted red pepper and arugula; drizzle with balsamic glaze.
