Preheat oven to 350°F. Place chicken in shallow roasting pan. Brush with 1 tablespoon of the oil. Sprinkle 1 tablespoon of the Seasoning all over chicken.
Toss vegetables in large bowl with remaining 1 tablespoon each oil and Seasoning. Arrange vegetables around chicken.
Bake 1 1/4 hours or until chicken is cooked through and vegetables are tender.
I take the skin off and throw away the meat. I only cook the chicken skin. It is the best part. I have also noticed that smoked sausage is hard to keep lit.

Just what I was looking for. Will have for dinner tonight. Using bone in skin on breast halved. Yum!
