- Place 1/2 cup of the heavy cream in large microwave-safe bowl. Microwave on HIGH for 1 minute. Stir in chocolate chips. Let stand 5 minutes. Whisk until smooth and well blended. Set aside to cool completely.
- Beat remaining 1 cup cream and vanilla in medium bowl with electric mixer until soft peaks form. Reserve 1/2 cup for topping mousse; refrigerate until ready to serve. Continue to beat remaining whipped cream until stiff peaks form. Gently fold about 1/3 of the whipped cream at a time into the cooled chocolate mixture, mixing gently just until blended.
- Divide chocolate mousse mixture into 4 small serving bowls or ramekins. Cover with plastic wrap and refrigerate at least 1 hour or up to 4 hours before serving. Top with reserved whipped cream to serve. Garnish with fresh berries, chocolate shavings, chopped nuts, or a sprinkle of McCormick® Ground Cinnamon, if desired.
