Instructions
- Preheat oven to 400°F. Toss sweet potatoes, oil, salt and pepper in large bowl until evenly coated. Spread in single layer on foil-lined 15x10x1-inch baking pan. Roast 25 minutes or until sweet potatoes are tender, stirring halfway through cooking.
- Meanwhile, cook and crumble meat in large skillet on medium-high heat. Drain. Stir in Seasoning Mix and tomato sauce. Bring to boil. Reduce heat and simmer 10 minutes, stirring occasionally.
- To serve, divide sweet potatoes among 5 serving bowls. Spoon Sloppy Joe mixture over top and add desired toppings.
Test Kitchen Tips:
- For easy weekday meal prep, divide potatoes and Sloppy Joe mixture into 5 microwave-safe portion containers with lids. Eat one today and refrigerate the remaining 4 portions for later! Store up to 4 days. To reheat, loosen lid and microwave until heated through (internal temperature should reach 165°F). Serve with suggested toppings, if desired.
- For a flavorful twist, substitute prepared macaroni & cheese, crisply cooked fries or tots, or even 1/2 of a baked potato in place of the sweet potatoes.
