Instructions
- Mix spices, salt, and cornstarch in a small bowl. Place chicken, peppers and onions, corn, beans, and tomatoes in the slow cooker. Add spice mixture to stock in a large measuring cup; whisk until well blended. Add to slow cooker. Cover.
- Cook for 6 hours on LOW or 3 hours on HIGH. Remove chicken to a medium bowl. Coarsely shred using 2 forks. Return to slow cooker, stirring to mix.
- To serve, ladle into individual soup bowls. Sprinkle with tortilla chips and serve with desired toppings, such as shredded cheese, sour cream, chopped avocado, sliced green onions, chopped fresh cilantro, and lime wedges.
