- Whisk egg yolks and 1/4 cup of the sugar in small bowl. Add heavy cream and vanilla; whisk until well blended. Divide mixture among four (4-ounce) heat-safe ramekins, filling about halfway (should be about 1/3 cup mixture for each serving). Cover ramekins tightly with foil, but do not wrap completely; bottom of ramekin should not be covered.
- Place a paper towel in the bottom of a large deep nonstick skillet. Place ramekins in pan and add enough boiling water to come about halfway up sides of ramekins. Cover with lid. Bring to simmer on medium heat. Reduce heat and simmer 12 to 14 minutes or until custard is set in the center. Using tongs or a heavy spatula, carefully remove ramekins from skillet. Cool slightly then refrigerate 1 hour.
- Arrange oven rack 6-inches from heating element. Preheat broiler on high. Place ramekins on sheet pan. Sprinkle the top of each custard evenly with 1 tablespoon of the remaining sugar. Broil 1 to 3 minutes, watching closely, until tops are lightly browned and caramelized. Refrigerate 15 minutes before serving to allow sugar to harden.
