- Pat lamb chops dry with paper towels. Place in large resealable plastic bag. Mix olive oil, garlic powder, rosemary, thyme, salt and pepper in small bowl. Add seasoning mixture to bag with lamb. Seal tightly; turn and massage lamb to coat evenly. Let stand at room temperature 20 minutes to marinate, or place in refrigerator to marinate overnight.
- When ready to cook, heat grill on high heat. Reduce heat on one side of grill to medium. Sear chops over high heat about 2 minutes per side. Transfer to medium heat side of grill and cook 3 to 4 minutes longer per side, or until internal temperature reaches about 140°F for medium-rare. Let rest 5 minutes before serving.
