Tacos al Pastor is a popular dish originating from Central Mexico, made with tender, spit-grilled pork. Reinvent this tradition without a fancy spit – right at home! Bake pork tenderloin seasoned with a mixture of McCormick® chipotle chili pepper, cumin and oregano, and surrounded by a simple pineapple salsa. INSTRUCTIONS

  • 1 Preheat oven to 425°F. Place pork in center of 15x10x1-inch foil-lined baking pan.
  • 2 Drain can of pineapple, reserving 2 tablespoons of the juice. Arrange pineapple tidbits and onions around pork in pan. Mix reserved pineapple juice and remaining ingredients, except for the tortillas, in small bowl. Coat pork with seasoning mixture.
  • 3 Roast 20 to 25 minutes or until pork is to desired doneness. Remove from oven. Let stand 5 minutes. Cut pork into thin strips and serve in warmed tortillas topped with pineapples and onions.
