Ingredients 8 Servings

  • 1/2 pound multicolor carrots, cut into 1-inch chunks
  • 1 pound sweet potatoes, peeled and cut into 1-inch chunks
  • 1 cup cherry tomatoes, halved
  • 1 large red onion, sliced
  • 2 cups cauliflower florets
  • 2 tablespoons vegetable oil
  • 2 tablespoons McCormick Gourmet™ Organic Berbere
  • 1 teaspoon sicilian sea salt
  • 2 tablespoons chopped fresh parsley

INSTRUCTIONS

  • 1 Preheat oven to 450°F. Toss vegetables with oil in large bowl. Sprinkle with Berbere Seasoning and salt; toss to coat. Arrange vegetables in single layer on large foil-lined shallow baking pan sprayed with no stick cooking spray.
  • 2 Roast 35 to 40 minutes, stirring halfway through cooking, until tender and golden brown. Sprinkle with parsley before serving.
