Heat oil in a large deep skillet or cast iron skillet on medium heat. Add sausage and cook until browned; about 5 minutes. Remove sausage with a slotted spoon. Set aside.
Add flavor cube to same skillet; crush with a spoon or spatula until crumbled. Stir in onions and bell pepper; cook 5 minutes until softened.
Add squash and asparagus; cook and stir 5 minutes until vegetables are tender. Return sausage to skillet; cook and stir 3 minutes longer or until heated through. Serve over cooked rice or pasta and sprinkle with chopped parsley, if desired.
